Egg Fried Rice

Preparation and cooking time : 40 mins

Ingredients

Rice : 2 cups
Onions : 2, finely chopped
Green chilli : 3
Ginger garlic paste : 1 teaspoon
Eggs : 5
Garam masala powder : 1 tablespoon
Pepper powder : 1 teaspoon, (optional)
Oil : 2 teaspoons
Soy sauce : 1 teaspoon (optional)
Salt : to taste
Coriander leaves : finely chopped for garnishing
Bay leaves : 2 (optional)


1. Boil rice with 4 cups of water. Once cooked, cool and keep aside.
2. Heat oil in a heavy bottom pan. Add bay leaves, onions and saute till onions become translucent.
3. Add ginger garlic paste, green chillies and saute for a minute.
4. Add the egg yolks and saute, scrambling the egg while it cooks.
5. Add garam masala podwer, pepper powder and salt. Saute for a minute and add the rice.
6. Mix well. Add soy sauce and saute for a minute.
7. Serve hot with tomato ketchup or raitha.
