I love cooking vegetables with eggs as this is a great way for me to feed them to my daughter. So after eggs with Spinach and Carrot, now it’s the turn of Cabbage :). This fry goes well with chapati and steamed rice equally. It’s quite easy to prepare and I am sure you’ll love the taste.
Cabbage: 250 grams; finely chopped
Eggs: 3-4 (as per taste)
Onion: 1; finely chopped
Curry Leaves: 1 twig (Optional)
Green Chilli: 3-4 (adjust as per your sice level)
Mustard Seeds: 1/4 teaspoon (Optional)
Salt: as per taste
Oil: 2 tablespoons
1. Heat oil in a wok. Add mustard seeds, curry leaves and let them splutter. Add chopped onion and green chilli. Saute till onion turns transparent.
2. Add chopped cabbage, salt and combine well. Cook with lid closed. Stir in between to avoid burning.
3. Break the eggs into a bowl and beat till they froth. Pour this over the cooked cabbage and combine well. Scramble till eggs are completely cooked. Transfer to a serving bowl and serve hot with chapati or steamed white rice.
